It’s been 12 days since I started the Beachbody Ultimate Reset where I’ve been following a strict meal plan. I’ve now cut out carbs, dairy, meat, fish, candy, alcohol, and all foods that come in boxes. So in other words, I haven’t been eating anything that comes from supermarkets except for the fresh produce section and some items in the canned food aisle. Before Reset, I haven’t spent much time in the fresh produce section, mostly because I didn’t know how to use any of the foods in my cooking. I’d only pick up a few items, like salad ingredients, where all I had to do was throw the ingredients together for a meal. Simple as that. But anything else? Don’t put me to the test.
But that’s all changed now.
I can make all types of great meals by just using vegetables, a few condiments, and other healthy ingredients. I can make hearty soups, purées, salad dressings, different variations of salads, marinated tempeh, vegetable medleys with great seasoning and cook with new flavors, like coconut milk, mint, interesting oils (sesame, coconut, safflower, etc.). In my experience so far, Reset hasn’t only been about healthy eating and weight loss, but more importantly, it taught me new recipes and not to be afraid in the kitchen. I’ve learned to become more creative with my ingredients and combination of flavors that would taste good in meals. I can probably whip out a great home-cooked meal using only few ingredients that’s low on calories and high in nutrition (depending on what’s in the fridge). Not being afraid in the kitchen is priceless because it allows me to step out of my comfort zone.
Starting on Sunday, I’m cutting out all grains including quinoa which means I’ll only be eating veggies and fruits. But I know I can make it, it’s only a matter of getting used to this new lifestyle that I’ve chosen for myself.
