I never knew what fennel bulb was until I made it for the first time today. It’s a very interesting looking vegetable – it kind of looks like an animated hand that’s about to give you a high five. So I felt a little bad when the recipe book asked to chop off its “fingers” first, but hey, I had to do what the book told me to.

I just cut it up into wedges, sprinkled some olive oil and Himalayan salt and stuck it in the oven for about 25mins. It shriveled up into a tiny, unattractive little vegetable that looked very unappetizing… But hey, never judge anything (or anyone) by its appearance, because roasted fennel bulbs are YUMMY!! It’s so full of interesting flavors – I’m not surprised that it’s often used in spices. I’d definitely like to keep this in my mental list of recipes! I would have never known how to cook fennel bulb or even know what it is if it weren’t for Reset ;)

I think I’m getting mentally stronger with staying away from sweets. In fact, it’s like my body doesn’t even ask for it because it knows that it’s not going to be getting any. It takes 21 days to break a habit, right? Well, now that we only have a few days left of Reset, my body is slowly starting to transition into this new lifestyle. I don’t think I’ve ever had a period in my life when I wasn’t craving for junk food! Sure, it may taste good, but it’s not worth all the calories and my hard work :)
