Another fantastic day that started at 6:30am! It’s only been 6 days into the cleanse and I’m starting to notice incredible changes to my body on an energy level, not so much on the physical. I feel much more alert and attentive at work, which brings enjoyment to my 9 to 5 work schedule. I’m much more productive and feel that I’m getting things done faster. And all this with no coffee! While my energy level is high during the day, I start crashing at around 10-11pm, which I’m assuming is a reasonable time to go to bed. I’ve always been a night owl, so feeling tired so early seems a little off to me. But I guess that’s a normal person’s schedule, maybe it’s time for me to adjust my sleeping schedule.

This morning’s breakfast was by far the worse. I didn’t even know what tempeh was until I had to marinate it overnight and bake it in the oven for 40mins. Who has time to make breakfast for that long in the morning?! I’d like to take the rest of this entry to share with you what I had to eat this morning. Here is the recipe for the baked tempeh:

Ingredients:

  • 2Tbs. apple cider vinegar
  • 2 Tbsp. Bragg Liquid Aminos
  • 1 1/2 tsp. toasted sesame oil
  • 1 1/2 tsp. 100% pure maple syrup (organic, grade “B” preferred)
  • 1/2 clove garlic
  • 1/2 block tempeh, cut into 1/2 strips
  1. Mix the first 5 ingredients well
  2. Arrange tempeh strips in a single layer in glass baking dish and pour marinade over tempeh
  3. Marinade tempeh for at least 1 hour in the fridge
  4. Preheat oven to 350 degrees F and bake 20mins
  5. Turn pieces of tempeh over and bake 15 more mins.

Yuuuuuum tempeh ;) BON APPETIT!
