DIY: Cauliflower Crust Pizza with Pesto

My roommate is an amazing chef, and fortunately for me, she’s sweet enough to treat me to a great home cooked meal when I have nothing left in the fridge. Her masterpiece tonight was *drumroll*…

Cauliflower based pizza with pesto!

No carbs, no meat – and it still tastes like pizza. You don’t feel bloated and fat after eating it, so there’s nothing to be guilty about! I’m going to give you step-by-step picture instructions so that you don’t mess up. Give it a whirl!

What you’ll need:

  • large head cauliflower, leaves and stems removed
  • 1 cup shredded mozzarella cheese (optional)
  • 1 eggs
  • 2 tsps dried oregano
  • 2tsps dried basil
  • 1 tsp minced garlic
  • 1/2 tsp salt
  • olive oil
  • pesto
  • your choice of toppings
  • olive oil spray

Instructions:

First, preheat the oven to 450 degrees. Chop the cauliflower into chunks and steam them in a steamer for about 15 mins.

Transfer cauliflower to a food processor and pulse until it looks like mashed potatoes.

Mix the cauliflower with the oregano, garlic, basil, egg and salt. Mix until everything is well blended.

Spray a cookie sheet with the olive oil spray and transfer the cauli mixture to the cookie sheet.  Spread the mixture evenly to cover the sheet. Cook at 450 degrees for 15 minutes.

When crust is browned, remove and turn oven to broil. Add our friend Mr. Pesto evenly on the crust. Like so:

And now the fun part – adding color, eh, I mean toppings! We first did a layer of spinach and then tomatoes, like so:

And then we topped it with artichoke hearts and olives. Like so:

Top it with some cheese and stick it back in the oven. Broil for 3-4 minutes, just until cheese is melted. And voila – you got yourself an awesome healthy-style pizza!

So good! Mine kind of crumbled apart though, had to eat it with a fork. But still tasted good!

Way to go Sophie! Mine slightly crumbled too. Yumm, cauliflower pizza sounds so good right now, especially during my Reset cleanse!
